Add potatoes and garlic to a medium saucepan; cover with water extended by 1 inch.
Using the same saucepan, add non-dairy butter, vegetable broth warm on medium-low stirring occasionally. Do NOT boil. Remove from heat.
Gradually add liquid ingredients, 1-2 tablespoons at a time mashing with a potato masher - do not use a blender or mixer - until you achieve your desired consistency; lumpy or smooth
Serve in a glass serving bowl and top with organic chives and more non-dairy butter.
