Vegan Organic Yukon Gold Mashed Potato Recipe

Okay so there are a ton of mashed potato recipes out there, but this one is the best….says our friends and family.

You can use any type of potato, but we use organic Yukon gold potatoes and the tricks you’ll find after the recipe will make them perfect every time.

Vegan Mashed Potatoes

Ingredients

  • 6 organic yukon potatoes large; cut 1" pieces; yield about 1.5 pounds
  • 3 cloves organic garlic peeled and smashed
  • 3 tbsp organic non-dairy butter substitute organic coconut oil
  • 1 cup organic vegetable broth substitute non-dairy milk
  • salt & pepper to taste
  • organic chives rinsed; finely chopped

Instructions

  1. Using a cutting board and a sharp knife, (peel if desired), quarter and rinse potatoes.

  2. Add potatoes and garlic to a medium saucepan; cover with water extended by 1 inch.

  3. Do not cover with lid; bring to a boil. Simmer about 13-17 minutes until potatoes are tender with a fork. Drain the water and set aside and a glass bowl.

  4. Using the same saucepan, add non-dairy butter, vegetable broth warm on medium-low stirring occasionally. Do NOT boil. Remove from heat.

  5. Gradually add liquid ingredients, 1-2 tablespoons at a time mashing with a potato masher - do not use a blender or mixer - until you achieve your desired consistency; lumpy or smooth

  6. Serve in a glass serving bowl and top with organic chives and more non-dairy butter.

Easy tricks to Avoid Gummy Mashed Potatoes

#1 – Rinse potatoes before and after cooking.

#2 – Warm-up the vegan veggie broth and non-dairy butter before adding to your potatoes.

#3 – Use a potato masher, not a blender or mixer.
